This is the Masahiro G series MG-613 Yanagiba traditional Japanese sushi chef knife made in Seki Japan. The Yanagiba is the choice fish knife for the sushi chef, but many also use it for poultry and vegetables as well. The knife is sharpened on one side to form a single bevel edge with a slightly concave flat grind on the opposite side for a more precise and uniform cutting edge. The 240mm blade is made of Masahiro Stainless Steel alloy MBS-26 Chrome-Molybdenum and Vanadium Stainless steel with stabilized black Stamina wood handle. This series was awarded "Good Design" by Japan's M.I.T.I. The knife comes in original gift box, quantities are limited!
